You asked, and we answered. After much experimentation, the Plants + Animals team has perfected our iconic keto buns to be tasty, nutritionally dense and easy to make. While we recommend you stop by sometime and try them on one of our tasty sandwiches, dig in below to try making our classic buns on your own.
4 1/2 cups almond flour
2 1/2 Tablespoons baking powder
1/2 cup psyllium husk
1/4 teaspoon xanthan gum
1 Tablespoon Salt
2/3 cup coconut oil
10 eggs (reserve one)
1 cup warm water
1/4 cup sesame seeds (optional)
Mix dry ingredients in mixing bowl. Add 9 eggs to dry ingredients and mix. Add water and room temp coconut oil and mix. Let mix rest 5 minutes then scoop 12 portions onto a lined sheet pan. Use remaining egg to egg wash buns before baking. Sprinkle with sesame seeds (optional)Bake at 325 F for approximately 20 minutes until golden brown.

This recipe is in 2 parts, the dry and wet mixes. It makes enough to coat 5lbs of chicken. We use thighs, which tend to stay juicier and have more flavor than breasts, but this works equally well with breasts. For further experimentation, this mix also works well for chicken fried steak!
Mix wet mix ingredients together and thoroughly coat chicken. Once chicken is coated with wet mix, in a separate bowl, toss in dry mix to cover thoroughly. This is best done in small batches to avoid clumping of the dry mix.
Now that your chicken is coated, it’s ready to fry. Using your deep fry method and vessel of choice, heat oil to 325 degrees. Once at temperature, fully submerge pieces for 5-7mins until golden brown. If using a meat thermometer make sure the internal temperature reaches 165 degrees.
